Vada Pav is very famous street food of Mumbai, India. It is often referred as the veg burger. This food is affordable for common people and loved by everyone. Vada is deep fried potato patties and pav is burger buns. Vada is placed in Pav(bun) with chutney and served with fried deseeded chilies. So in a word Vada Pav is spicy potato filling sandwiched between buns and layers of spicy garlic and green chutney.

Apart from that, I think that every one should go Mumbai at least once in their life and taste the authentic taste of all street foods. I grew up around North India and i tried street foods in North India. And I realized that, the taste of pav bhaji or vada pav could never match up to the one in Mumbai.

Anyway coming back to the point. This recipe has 4 main ingredients – the vada, the dry garlic coconut chutney, the green chutney and the sweet tamarind chutney. Tamarind chutney is optional you can skip but I recommend not to skip the garlic chutney.

Here is the recipe of making it in 1 hour at home. Try it.

Ingredients For Preparing Vada Pav

For Green Chutney:

  • 1-2 cup coriander leaves
  • 1 tablespoon dalia or dried coconut
  • ½ tablespoon cumin (jeera)
  • 2 green chilies
  • 2 small garlic cloves or lehsun
  • 1 tablespoon Lemon juice
  • water as needed
  • salt to taste

For Dry garlic chutney:

  • 6-8 garlic cloves
  • 6-10 red chilies
  • 1 cup dried coconut
  • 1 tablespoon peanuts
  • salt to taste
  • ½ tablespoon red chili powder

For Vada Pav stuffing:

  • 3 medium potatoes
  • 2-3 green chilies
  • ¾ inch ginger
  • 2-3 cloves garlic
  • 1 tablespoon oil
  • ½ tablespoon mustard
  • 2 pinches hing (asafoetida)
  • 1 spring curry leaves
  • ¼ tablespoon turmeric
  • salt to taste
  • some coriander leaves

For the Vada covering:

  • 3 tablespoon rice flour or corn flour
  • ¾ cup gram flour or besan
  • salt to taste
  • pinch hing
  • 1 pinch turmeric
  • oil for deep frying

For serving:

  • 7-8 pav
  • 7-8 green deseeded chilies

Directions:

To make dry  garlic chutney for Vada Pav:

  • At first skin the garlic and dry roast them(for 2-3 minutes)
  • Then add red chilies and roast for 2 minutes
  • Now transfer them in a plate and let it cool.
  • Now on that pan add coconut and make it hot, then transfer them in a plate and let it cool.(You can use peanuts also)
  • After completing the above steps now take red chili, red chili powder, salt and garlic in a blender jar. Blend it nicely. Then add coconut and peanuts, powder them well and set this aside.

To make green chutney for Vada Pav:

  • At first take the tender stalks of coriander leaves, wash it well with fresh water for several times and place it in colander.Then add all the ingredients in a blender jar add some water to make it thick, and blend nicely until smooth.
  • After this adjust salt, lemon juice, and chilies according to your taste. The chutney must be little thick
  • Now in a air tight glass jar refrigerate for sometime

To make stuffing for Vada:

  • At first boil the potatoes in a pressure cooker or in a pan, and after boiling crumble them lightly.
  • Make a paste of green chilies, garlic and ginger.Heat 1 tablespoon oil in a pan and add mustard
  • Now add curry leaves and fry
  • Next add ginger, garlic and green chili paste, fry it on low flame, turn it fragrant
  • After completing the above step add hing, salt, turmeric, and red chili powder. Mix it well and add potatoes and coriander leaves.
  • Turn off the gas cool this mixture and make 8- 10 balls with this mixture

To make Vada:

  • At first add oil in a pan for deep frying, regulate the flame to medium.
  • Add besan, rice flour, salt, hing, turmeric and red chili powder in a bowl and mix it well. The mixture should not be too thick nor too thin.
  • Now coat the potato balls in that mixture and drop into oil, and fry until golden.
  • Take it out and keep in a tissueIn that oil little fry 3-4 deseeded green chilies.

To assemble Vada Pav:

  • Cut one side of Pav bun.
  • Smear green chutney on both inner side of the Pav
  • Your Vada pav is ready, now place a batata Vada inside.

Serving

Serve it with fried deseeded green chili and green chutney on side. Its good to consume immediately as turns soggy after sometime

Keep in mind

You can always change the amount of chutneys you spread in the pav according to your taste and liking. It will make you feel good.
